Swimming With The Fishes Cheesy Snack Mix

February 8, 2024

Ingredients:

  • 1 cup bagel chips, break some of the large chips in half

  • 2 cups Crispix Chex cereal

  • 2 cups Honey Nut cereal

  • 1 cup mini pretzels

  • 2 cups pepper jack or white cheddar Cheez-Its

  • 1 1/2 cups Goldfish regular size crackers

  • 2 cups Goldfish mega crackers

  • 1/2 cup roasted salted almonds

  • 1/2 cup salted cocktail peanuts

  • 1/2 cup melted butter

  • 1/2 cup shredded Parmesan cheese

Directions:

1. Using a large microwavable bowl combine bagel chips, Crispix Chex cereal, honey nut cereal, pretzels, Cheez-Its, Goldfish crackers, almonds and peanuts.

2. Drizzle butter over the top and gentle stir using a large spoon or soup ladle until combined. Microwave uncovered on high for 1 minute. Gentle stir and then microwave again on high for 1 minute.

3. Gentle stir in Parmesan cheese and microwave on high for 1 minute. Let snack mix cool for 3 minutes and then serve.

Notes: I revised the directions for this recipe. The old directions called for stirring the Parmesan cheese at the end. I noticed the Parmesan cheese just ended up at the bottom of the bowl. So by adding the cheese and microwaving a third time works so much better. The Parmesan cheese now will get hot enough to melt and stick to the snack mix.
