Ingredients:
For the Croutons:
3 medium size plain bagels, cut into bite size cubes
3 tablespoons olive oil
3 tablespoons melted butter, then slightly cooled
2 tablespoons everything but the bagel seasoning
Salad dressing:
Creamy spicy avocado lime salad dressing (click for recipe)
For the Salad:
1 bag (9 ounces) pre-made iceberg, romaine, carrot, red cabbage and radish salad
1 bag (5 ounces) pre-made baby spinach salad
Cherry tomatoes (10 ounces), sliced in half
1/4 cup red onion, thinly sliced and then chopped
1/4 cup green onion, chopped
1/2 of an English cucumber, skin removed, cut into bite size cubes
2 tablespoons dill weed
1 large avocado, pitted, skin removed and then cut into bite size cubes
Cream cheese (8 ounces), cut into bite size cubes
2 tablespoons everything but the bagel seasoning
Smoked salmon (12 ounces), skin removed and chopped
Lemon or lime wedges
Directions:
1. Preheat oven to 350 degrees F. Line a baking sheet with nonstick foil or parchment paper. Add bagel cubes to a medium size bowl. Using a small bowl, combine the olive oil and butter. Drizzle over the bagel cubes and then toss to coat. Sprinkle the 2 tablespoons everything but the bagel seasoning over the top and then toss to coat. Transfer the bagel cubes evenly to the prepared baking sheet and bake for 15 minutes. Remove baking sheet from oven and let completely cool.
2. Using an extra-large bowl, add the pre-made salads, cherry tomatoes, red onion, green onion, cucumber, dill weed and then toss to combine. Using a small bowl, add the 2 tablespoons of everything but the bagel seasoning. Using only about 8 to 12 cream cheese cubes, dip and press one side in the seasoning so that the seasoning sticks to the cream cheese. Add the avocado, cream cheese cubes and smoked salmon to the salad bowl and gentle toss to combine.
3. Serve the salad with the bagel croutons, avocado salad dressing and lemon or lime wedges.
