Smoked Oyster Dip/Spread

Ingredients:

  • 2 packages (8 ounces each) cream cheese, room temperature

  • 1/4 cup mayonnaise

  • 1/4 cup sour cream

  • 1/4 teaspoon ground cayenne powder

  • 1/4 teaspoon garlic powder

  • 2 tablespoons chopped green onion, green part only

  • 2 cups shredded Monterey Jack cheese

  • 6 ounces smoked oysters, chopped into bite size pieces

 

Topping:

  • 2 tablespoons butter, melted and then slightly cooled

  • 2/3 cup white cheddar Cheez-It crackers, mostly crushed, leaving some parts of cracker

  • 2 tablespoons shredded Parmesan cheese


Directions:

1. Preheat the oven to 350 degrees F.

2. In a large bowl, add cream cheese, mayonnaise, sour cream, cayenne powder and garlic powder. Stir well until all is incorporated. Stir in green onion and Monterey Jack cheese. Stir in chopped smoked oysters. Add mixture to an 8-inch x 8-inch ovenproof pan.

3. In a medium bowl, combine melted butter, crushed Cheez-It crackers and Parmesan cheese. Spread evenly over the top of the dip. Cover pan with aluminum foil.

4. Bake for 40 minutes. Remove the aluminum foil and cook for 5 more minutes. Remove pan from oven to a wire rack to cool for 5 minutes. Serve warm.

Notes: Serve with crackers or chips as a dip. Spread for sliced baguette, toasted and buttered (our favorite). Spread on large romaine leaves.
