Mini Calzones

Ingredients:

  • 1/2 cup marinera sauce

  • 1/4 teaspoon red pepper flakes

  • 1 lb. store bought pizza dough

  • 1/2 cup ricotta cheese

  • 1/3 cup finely chopped pepperoni

  • 1/3 cup finely chopped Canadian bacon

  • 1 cup shredded mozzarella cheese

  • 1 large egg

 

Directions:

1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.

2. In a small bowl, stir together marinara sauce and red pepper flakes.

3. Divide pizza dough in half. Roll out half of the pizza dough into a 16-inch by 12-inch rectangle. Using a 3 1/2-inch diameter biscuit cutter, cut out rounds of dough. Repeat with other half of the pizza dough. You should have roughly 15 to 18 rounds.

4. Using your fingers flatten out each round of dough to create a slightly larger round. Leaving room on the edges, place 1 teaspoon of marinara sauce in the middle of each round followed by: 1 teaspoon ricotta cheese, 1/2 teaspoon pepperoni, 1/2 teaspoon Canadian bacon and 1 heaping teaspoon mozzarella cheese. Fold the dough over to create a half-moon. Using a fork, crimp the the edges of the dough to seal and place mini calzone on the prepared baking sheet. Repeat for the other mini calzones.

5. In a small bowl beat the egg with a little bit of water. Brush each mini calzone with the egg wash. Bake for 15 to 20 minutes or until golden brown. Remove baking sheet from oven to a wire rack to cool. Serve with extra marinara sauce on the side for dipping.
