Ingredients:
2 tablespoons butter
1 small sweet onion, chopped
1 cup frozen cut green beans
2 cups frozen peas and carrots
3 cups fully cooked sausage stuffing
1/4 cup canned whole kernel corn, drained
3 cups fully cooked turkey, chopped into bite size cubes
2 cups shredded Cheddar cheese
1 1/2 cups turkey gravy
1/2 teaspoon salt
1 teaspoon black pepper
1/8 teaspoon red pepper flakes
3 1/2 cups fully cooked mashed potatoes
1 teaspoon dried parsley
Directions:
1. Using a frying pan on medium heat. Melt butter and cook onion for 8 minutes or until soft.
2. Preheat oven to 360 degrees F. Line a baking sheet with foil or parchment paper.
3. Place frozen green beans, peas and carrots in a medium size microwavable bowl. Add enough water to cover and microwave on high for 5-6 minutes. Let cool, then drain water.
4. Place the stuffing in the bottom of an oven safe 9 x 13-inch pan. Spread out evenly and gently press down.
5. Using a large bowl, add onion, green beans, peas, carrots, corn, turkey, cheese, gravy, salt, pepper and red pepper flakes. Gently stir until combined. Place over the stuffing and spread out evenly.
6. Spoon mash potatoes over the top and spread out evenly.
7. Cover the pan with foil, place on baking sheet (just in case of spill over) and cook for 55 minutes. Remove foil and cook for additional 45 minutes or until mash potatoes are golden brown on top. Remove from oven to a wire rack, sprinkle parsley over the top. Let cool for 10-15 minutes, then serve.
