Eggcellent Biscuits & Sausage Gravy Casserole

Ingredients:

  • 1 x Pillsbury refrigerated grands buttermilk biscuits (10.2 ounce)

  • Ground breakfast or country sausage (1 pound)

  • 1 1/2 cups shredded cheddar cheese

  • 7 large eggs

  • 1/2 cup whole milk 

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

 

For the sausage gravy:

  • 2 tablespoons butter

  • 1/3 cup All-purpose flour

  • 3 cups whole milk, room temperature

  • 3/4 teaspoon salt

  • 3/4 teaspoon black pepper or more to taste

 

Directions:

1. Preheat oven to 350 degrees F. Lightly spray a 9-inch x 13-inch ovenproof casserole pan with cooking oil. 

2. Cut each biscuit into 4 pieces. Place biscuit pieces equally spaced apart in the prepared pan and bake for 8 minutes (par baking the biscuit pieces will help keep them from getting soggy, they will bake the rest of the way when you bake the final casserole). Remove pan from oven and set aside for later.

3. Using a large frying pan on medium-high heat. Add sausage, breaking apart into small bite size pieces as it cooks until brown and caramelized. Reduce temperature to medium heat for the gravy. Using a slotted spoon, remove sausage to a paper towel lined large plate. Remove 1/3 cup of the sausage to a separate small plate and then finely chop (will be used later for the gravy).

4. For the gravy:  Add the 2 tablespoons of butter to the sausage drippings in the large frying pan until melted. Scrape the bottom of pan to deglaze the sausage drippings. Add flour, stirring constantly for 2 minutes. Slowly drizzle in the 3 cups of milk, whisking constantly. Add the 3/4 teaspoon of salt and 3/4 teaspoon black pepper, whisk until combined. Increase heat to medium high until gravy starts to bubble, whisk slowly until gravy reduces and starts to thicken, about 3-5 minutes. Add the 1/3 cup of finely chopped sausage, stir until combined. Remove pan from heat and set aside for later. 

5. Scatter the sausage from the large plate over the biscuits in the casserole pan and then top with the cheddar cheese. Using a large bowl, whisk the eggs, 1/2 cup of milk, 1/2 teaspoon salt, and 1/2 teaspoon black pepper until combined. Pour the egg mixture over the top of ingredients in the casserole pan. Top evenly with the gravy. Bake for 40-45 minutes. Remove from oven to a wire rack to cool for 10 minutes and then serve.
